Protein Peanut Butter Ice Cream

- 1.5 Scoop Vanilla Whey Protein
- Water
- 3 Teaspoons of All-natural Peanut Butter
- 2 Tablespoons of Stevia
- 1/4 Teaspoon of Cocoa Powder

Directions
- Stir together to make a peanut butter sauce: 1.5 scoop vanilla protein, enough water to make a pudding and 1 teaspoon all-natural peanut butter.
- Pour the following ingredients on top of the peanut butter sauce: 2 teaspoons peanut butter or allowed amount, 2 tablespoons Stevia, 1/4 teaspoon cocoa powder and twice as much cold water as peanut butter.
- Stir together. You may need to add more water. I like mine pretty thick.
- Place in freezer.
- I make several ahead of time. They freeze solid, so let them sit out for 30 minutes on counter before eating.
*Feel free to also use almonds.

If you haven’t tried it give coconut a flour a try. Low carb and it helps the protein/water congeal a bit thicker.
Now that sounds delicious.
One question, though: 3 TEAspoons of peanut butter doesn’t sound like very much, and 2 TABLEspoons of Stevia sounds like an awful lot. Can you confirm those measurments? I can’t wait to make this, but I didn’t want to mess up the measurements.

The stevia sub amount is defintely a lot. Stevia subs are generally really sweet to the taste. I used 2 teaspoons the first time. However, I used a chocolate flavored whey protein and didn’t use any cocoa powder.
I would say if you are using the vanilla whey protein, add the cocoa powder, then add the stevia sub 1 tsp at a time to taste.
Regarding the PB, I thought 3 tsp was a lot. I used 1 tsp for the first part and then 1 tsp for the second part and that was plenty. A little bit goes a long way here
Made this tonight, it was very good! Don’t have any Stevia, so I used sugar. Liked it a lot.
